What we stand for
At the heart of everything we do is the product itself, honest, natural and as regional and seasonal as possible.
A key part of our work is preserving ingredients. We ferment, pickle, and cure, and in doing so, carry flavors beyond their season. Most of our herbs come directly from our own herb garden and find their way onto your plate, fresh or processed. We also pursue our own non-alcoholic approach by crafting our own healthy beverages that naturally support the body through living microorganisms.
Our authenticity runs through everything we do, from the food we use to the wines we select with intention and the people who shape our house. Each one special in their own way.


Udo Herrmann
Born in Heidelberg, he has worked in some of the most renowned restaurants along his journey, including the Steirereck in Vienna and the Gourmetrestaurant Hubert Wallner at Lake Wörthersee. His expertise forms the foundation of our house. He is someone who truly understands his craft, and does so in a calm, almost humble demeanor. What makes him special is not only his experience, but his genuine joy for cooking, for being together, and for his daily work, an energy that carries over to the team, onto the plate, and ultimately to our guests. At his side are Ben as sous-chef, Marlon as restaurant manager and sommelier, and Philipp as chef de partie – people he can rely on.
Marlon Hallmann
Marlon, originally from Berlin, is our sommelier and restaurant manager. His passion lies in characterful and authentic wines, which he selects with sensitivity. With his expertise and passion for fine dining, he guides guests through the evening, and completes our experience.
Ben Glowacz
Ben is originally from Garmisch-Partenkirchen and completed his apprenticeship at the renowned Ikarus restaurant in Hangar 7. He's young, full of motivation and creativity, and brings a sense of lightness to our kitchen. He has learned from the best and through the restaurant´s unique guest chef concept, gained many impressions that have shaped him.
Philipp Oberhammer
Philipp is from Innsbruck and lives up to his name. Following a traditional career path, he eventually found his way to us at Onriq, where he is now putting the finishing touches to his work and enriching our team with his Tyrolean charm.
